- Bengali Shrimp Curry (Chingri Macher Malai Curry) A classic dish to honor sons-in-law, respected individuals in a Bengali family. Silky and subtly seasoned shrimp with bay leaves, cinnamon and ginger paste in a creamy coconut milk
- Egg Pakoras. Quartered hard-cooked eggs are dipped in seasoned chickpea flour batter to make a fritter popular at Indian parties.
- Ginger Chutney A wonderful dipping chutney from Andhra Pradesh in South India.
- Panir with Peas. Homemade cheese (panir) with peas in a cumin-scented tomato gravy. We will make cheese in class.
- Garhwali Jaggery flatbread – a recipe from the far north, this special occasion sweet flatbread is perfect with a cup of tea or coffee.
